The question here in Pakistan is that one should be on a gluten free diet or after giving a break check the growth of intestine by destroying it again. Once diagnosed with celiac disease means that there should not be a single molecule of gluten in diet and wheat free or say to be precise gluten free diet is the choice.
So be clear that experimenting with gluten after diagnosis is slow poisoning and return to the pre-diagnosis state. All the betterment within ones intestines is flushed away with the satisfaction of taste buds.
The upcoming posts will mainly concentrate on ROTI and this is time to play with flours and make a combination of local gluten free flours to make or be close to the ideal gluten-free ROTI until the best flours and gourmet blends are readily available all over.
