Pre-Purchase Contamination

Greetings, emails from coeliacs on the authenticity and the claim of being "gluten-free" are increasing and making it a real objective for us to provide information that is correct and reliable. So, any product labelled as Gluten-Free should have "at least" these post purchase checks from the manufacturer of any kind of product. The checks here are for flour and may be increased and improved depending on circumstances. These include:
  • Grain packing( contaminated bags should not be used which previously had grains with gluten)
  • Transportation and storage of grains
  • Milling/ grinding of grains( separate machines should be used to avoid contact and contamination)
  • Final Packing(contaminated bags should not be used which previously had flour with gluten)
  • Transport (many packing of flour is porous and contact between gluten-free and glutenous flour can occur.
  • Shelf sharing (this is a shared responsibility of producer and seller to ensure shelfs are different of gluten-free flours)
The next post would be on post-purchase contamination and measure to avoid gluten intake.
